Peaches and Cream Cake
Remember those Peaches and Cream “Cream Savers” from the good ole days? Those orange swirled, hard candies that set the BAR for any hard candy that followed?
Enter the Peaches and Cream Cake.
This tall beauty is full of peach cake layers, fresh peach compote, peaches and cream filling, and creamy vanilla buttercream. The cake layers are subtly peach. To avoid using artificial flavoring in the layers, I took the advice of another cake baker and used peach Greek yogurt and peach nectar.
Next is the peach compote that was made with just fresh peaches, sugar, and cornstarch. The peaches and cream filling is vanilla buttercream mixed with about a cup of the peach compote. I wanted the filling to have some contrast compared to the layers, so I tinted it pink. It came out a bit more pink than I was anticipating, but that’s okay!
Finally, the vanilla buttercream. You guys LOVED this piping pattern on the Poppyseed Cake.
This cake is about five pounds and stands about ten inches tall, so there is a dowel right in the center to hold everything together.
