Sweet Potato Spice Cake

What’s your favorite holiday side dish? Mine is a stiff tie between macaroni and cheese and sweet potato casserole.
When I was thinking about those two dishes, I figured it would be best to not turn the Mac and cheese into a cake.
But the sweet potato casserole? I’m game. From the marshmallows to the brown sugar and pecans, it already has the perfect elements to make a delicious cake. The football was teed up, all I had to do was kick it.

THE CAKE
The sweet potatoes give such a unique flavor and texture profile to this cake. The closest thing I can think to compare it to is your classic carrot cake - dense yet tender, flavorful, and just so fluffy!
The pecans and marshmallows fall right in line with the traditional dish.
The pecans were toasted and then baked with some flour, cinnamon, and brown sugar to make a streusel. They’re placed on top of the marshmallow filling between each cake layer.
Then of course the spiced pecan buttercream is just the cherry on top of this cake and it only felt right to texture it a bit to add some flair.
The kick is good my friends.
