It’s My Birthday!
Happy Birthday to Me!
Wow… what an insane year it has been! I’m turning 28 - I think - and time is going by so quickly with each year that passes.
The growth that I see from Homemade by Celena is so inspiring and I can’t help but correlate it with my growing age as well.
Birthday Cake
Birthdays are a big deal around the Grant household, but I’ve always appreciated a small and intimate birthday celebration. My ideal birthday celebration is family, good conversation, belly-laughs, rest, and of course - cake!
Last year as I was just getting my feet wet with Homemade by Celena, I made myself an Ice Cream Sundae Cake for my birthday as I was on an ice cream kick at the time (go figure). It was absolutely delicious and I loved every bite.
This year as I thought about what cake I wanted to bake myself, I thought about what foods I had been super into lately. A few ideas crossed my mind… breakfast food, Biscoff cookies, and Ferrero Rocher chocolates.
I already have a few cakes with Biscoff incorporated into them, and I’m planning on making a pancake cake in the future, but the Ferrero Rocher idea really stuck with me.

You read that right, friend! Nutella is the PERFECT compliment to Ferrero Rocher chocolates and the pair is a combination you definitely need in your life - whether it’s in cake form or not!
The Cake
My go-to, no-fail chocolate cake layers are the base of this decadent cake. I doubled my recipe to really capture the chocolate element of the candy.
The Filling
I went simple with this one and used a hazelnut mousse with some chopped Ferrero Rocher candies.
The Buttercream
To match the emphasis on the chocolate emulating from the cake layers, we have a strong - but not too strong - hazelnut buttercream thanks to Nutella.
It all came together beautifully and as it turns out, this is everything I’ve ever wanted for a birthday cake, I just didn’t know it!
