Lucky Cake
St. Patrick’s Day Inspiration
It’s already St. Patrick’s Day… what?! I guess it’s true what they say, when you’re having fun, time really does fly.
I’m always looking for a reason to decorate a cake and lucky for me, St. Patrick’s Day gave me a perfectly good reason to go all out with my turntable and food coloring.
The Cake
Probably every baker that you know has a little secret… a secret that allows them to decorate cakes quickly and with minimal waste - a dummy cake! I have a dummy cake that is comprised of cake layers from recipe testing that didn’t quite turn out how I wanted them. When I get to use those layers in a dummy cake, it’s a win-win! No waste and a pretty cake! At least on the outside.
The inside of this cake is a hodge-podge of chocolate, vanilla, and strawberry cake layers. Okay, enough of the boring stuff.
Can We Skip to the Good Part?
Gosh, I thought you’d never ask!
Decorating this cake can be broken down into a few simple steps:
- Fill and stack using buttercream colored with AmeriColor food gels 
- Trace shamrocks onto the sides of the cake and “paint” them 
- Pipe a rope border around the top of the cake using Wilton’s 1M tip 
- Assemble the fondant rainbow and allow it to dry 
- Place the rainbow, leprechaun, and pot of gold 
- Top it off with some of my most favorite sprinkles from Sprinkle Pop Shop
