Mile High Coconut Cake

This is one of the most photogenic cakes I’ve ever made and photographed. It’s just beautiful.

It’s packed with coconut, too! 

THE ELEMENTS

This cake has old fashioned coconut cake layers infused with coconut milk, a creamy brown butter coconut filling, and instead of going with the traditional cream cheese frosting, I went with a coconut buttercream. 

This cake has a very tight crumb resulting from the use of cake flour, which results in a very fluffy cake, but one that still STAYS on your fork! What a winner!

THE BEAUTY

The outside is just toasted coconut that I removed from the oven at separate intervals to create an “ombré” effect. I have to say I borrowed this idea from “Baking with Blondie”.

I’m excited to bring this cake to the Thanksgiving table next week. I think it’s a wonderful modern take on a classic cake.
