O’Henry Cake

THE OCCASION

If there’s anything in life that deserves a cake, it’s a wedding anniversary. Thomas and I celebrated our wedding anniversary on September 16th and I wanted to make a cake especially for us.

THE INSPIRATION

You know those bars that just show up at every family function? You’re really not sure who brought them, but they’re always delicious and probably the first dessert to go.

Sometimes they’re chocolate, like my mom’s “Tiger Stripes”, sometimes they’re fruity like lemon bars, sometimes they’re like Rice Krispy treats. Whatever they are, they’re always fabulous and they taste like home.

This cake is modeled after the famous “O’Henry Bars” made with rice crispy cereal, caramel, butterscotch, chocolate ganache, and peanut butter.

THE ELEMENTS

Translate the O’Henry Bar ingredients into cake language and we end up with:

- Dulce de leche and peanut butter cake layers

- Chocolate butterscotch buttercream made from dark chocolate and butterscotch ganache

I also stashed some O’Henry bars between the layers of this cake and of course decorated the top with the leftovers.
