Ugly Sweater Cake

I LOVE ugly Christmas sweaters. I love them so much that while I was still working in Human Resources, we hosted an Ugly Christmas Sweater contest every year during our Christmas party. Even though I’m no longer working as a professional, I hope that tradition continued. 


This cake was inspired by my extreme love for ugly Christmas sweaters. 

Originally, the cake was going to be the traditional Christmas red and green, but at the last minute decided pink was going to be extremely fitting (and fun!) for this cake. 

The pom-poms are cake pops and the rest of the detail is simply piped buttercream. 

But wait, there’s more! Inside is where it really gets interesting. Green-velvet cake layers! 

I know what you’re thinking… what in the world? But trust me, this green velvet tastes just as good as red velvet. I substituted the red velvet emulsion I would normally use in this cake for green food coloring and added some citrus extract to bring out the signature buttermilk taste that makes red velvet so unique. 

This cake makes me so happy to just look at - I hope it does the same for you!
