Caramel Coconut Fudge Cake
Aka… Samoa Cake.

What’s your favorite Girl Scout cookie? Mine, without a doubt, is the Samoa cookie. It has some of my absolute favorite things in it - caramel, chocolate, and coconut.
I will shamelessly eat a whole box of Samoa cookies. Okay, maybe not *totally* shamelessly, but I have zero self control around those cookies. None!

So this cake just had to come to life after I had gotten my hands on some true, Girl Scout Samoa cookies last month. Not the knock off brands from the store, nope. THE Girl Scout cookies.
If you look at a Samoa cookie, you’ll see shortbread, caramel and coconut filling, and a chocolate drizzle. So that’s exactly what we did here!

HOMEMADE, FAIL-PROOF CARAMEL
I’ve been working on perfecting my caramel recipe (by the way, it’s coming to the blog soon for you all to try out for yourselves if you want) and this cake has a good bit of caramel in it.
I wanted there to be no doubt what this cake was when you looked at it, so I plastered some Samoa cookies to the outside of it.
This cake really does taste like a Samoa cookie and I’m so glad!
