Blonde Biscoff Brownie Cake

Some recipes just don’t work out, however, this isn’t one of them.

Biscoff cookies are one of life’s greatest simple pleasures and chocolate has been deemed as one of woman’s best friends for ages. Why not put them together?!

This cake has the best of both worlds with two Biscoff cookie cake layers and a brownie layer sandwiched between them. The three layers of heavenly goodness are held together with Biscoff buttercream, cookie butter, and chocolate ganache.

Friends, I love every single part of this cake. As I dug in to my slice, I kept thinking it couldn’t get any better. But bite after bite, it got EVEN better!

The brownie layer has chunks of dark chocolate throughout and there are crushed Biscoff cookies between each layer, providing a welcomed crunch and texture.

Biting into a brownie expecting instead of chocolate cake was also a welcomed change.
