Sweet Sweaty Summertime

Thankfully, summer is almost over here in Alabama. I love wintertime and all of the cold it brings. Summertime is unbearable in the south (I know I’m being a bit dramatic) and the humidity, well, don’t even get me started.

However, summertime does bring joy to those closest to me, so I couldn’t let it slip by without making the ultimate summer-inspired cake - the Pina Colada Cake.

The Breakdown

Nope, not my own personal one (though there have been plenty lately). I’m talking about the cake!

  • Coconut cake layers

  • Fresh pineapple curd

  • Toasted coconut

  • Coconut buttercream

From the smooth flavor of coconut to the hint of tartness from the pineapple curd, this cake embodies that sweet, sweet daiquiri in all the best ways.

So, here’s to summer and its ending! See ya next year, 110 degrees.
